Montserrat's premiere restaurant, the Belham Valley Restaurant, is also part of the hotel.
Manager Aileen Fenton and Chef Richard Daly, co-owners, bring a wealth of experience in the
restaurant and food business from Boston, Mass. Among their island dishes, don't miss the
spectacular Island Pumpkin Soup, or the Montserrat Conch Fritters. Also on the menu are such
favourites as the delectable Escargots a la Bourguinonne, a pepper steak sauteed in in butter
and flambeed with brandy or a combination of seafood served in a rich vermouth cream sauce,
and that ubiquitous Montserrat "Mountain Chicken", which are large frogs legs.
Desserts are mouthwatering including a local favourite Coconut Cheesecake, a velvety smooth
lime mousse, or a fresh Coconut Pie.
